Try these snacks for low-carb game day

Parmesan cheese crisps

I'm just here for the snacks. As a not-so-diehard football fan, the Super Bowl is usually the only game I watch each year. It comes with a party and everyone brings their favorite snacks to share. I love party food, but it's not exactly "carb friendly" most of the time.

Some of our favorite low carb party treats include bacon wrapped jalapeño poppers, chicken wings and, of course, the go to meat and cheese platter. But what about some of those snacks that aren't so low carb?

I love all the different dips people make for social gatherings, cheese dip, spinach dip, shrimp dip; they're all good! This year I'll have to bring some sliced peppers, carrots and celery for dipping. Even better, I'm going to bring some cheese crisps for some extra scrumptious dipping.

To make your own cheese crisps, shred some of your favorite cheese and bake at 350 degrees for 5-10 minutes.

I find it easiest to make small piles on a parchment paper lined baking dish or use a mini muffin tin to make thicker, more uniform chips. Keep a close eye on them though, you don't want them to burn!

And what about enjoying a dip you don't have to dip? Try stuffing some crimini or white button mushrooms with your favorite warm dip. I think I will try a chicken enchilada queso dip I recently found. Carefully remove the stems and gills and fill the mushrooms with about a tablespoon of your dip and bake your stuffed mushrooms for 15-20 minutes in a 350-degree oven.

If you want to try the chicken enchilada queso dip with me, you will need:

3-8 oz. blocks cream cheese

2 c. rotisserie chicken breast

1 can chopped green chiles

1 1/2 c. shredded Monterey Jack

1 1/2 c. salsa verde

Mix it all together and fill your mushrooms.
